Southern Matriarch’s Legacy of Food, Family, and Generosity Lives at Emma’s BBQ

Emma’s BBQ has been treating southeast Seattle to the rich and oh-so-satisfying tastes and textures of traditional southern cooking—leaving no expectation unsatisfied—for three years, but the (secret) recipes were created in the actual South by “Momma Emma” Thomas a generation ago and have been passed down to current generations. Some menu items might be a little heart-healthier than they once were, says owner, Tess Thomas. “Through the years we may have tweaked a recipe,” says Tess, but the family gives all the credit to Momma Emma for the flavors of Emma’s BBQ. Take it Outside: Beacon Hill Pizza Cart Brings Years of Experience to Local Pies

Just like postal workers, “neither snow, nor rain, nor heat” will stop Chris Lally of Outsider Pizza from slinging slices. He’s fearless in the face of any weather condition. It’s sort of a requirement of owning your own pizza cart that is stationed in the windy courtyard of Beacon Hill’s El Centro de la Raza. His strategic setup includes wind shielding and careful clothing selection. It helps him weather the storm, as it were, and focus on the important things: his pies.

Billiard Hoang Offers Hearty and Homey Food in Columbia City

Mai Truong, co-owner and operator of the Columbia City restaurant, bar, and pool hall, Billiard Hoang, escaped Vietnam in 1981 on a boat. Fleeing from the Saigon region of the Communist State, Truong landed on the West Coast. She later arrived in Seattle where, in 1987, she helped open her establishment, which today serves some of the most appreciated traditional Vietnamese food in the Emerald City.
